don't know about ring doughnuts, but i think dinky doughnuts are made from balls of dough .... if ya got a dough ball.... it wouldn't make sense to turn it square, would it?

Great question.
The round shape and the hole in the middle is the best way to make sure all parts of the doughnuts are fried evenly. Had there not been a hole, either the middle part would be under-fried or the edges/outer circle would be over fried, either would impede the taste of the doughnut.
